Decorated swiss roll

This is the more fancy and glamorous cousin of everyday swiss roll.

Ingredients

6-serving
  1. 6 eggs yolk , and white separated
  2. 6 Tablespoons sugar granulated
  3. 6 Tablespoons flour
  4. 1 Pinch salt
  5. 1 Teaspoon vanilla essence

Method

    Preheat oven to 450° F. In a large greaseless bowl, beat the egg whites until stiff but not dry.

    While still beating, add the sugar tablespoon by tablespoon. Continue to beat while adding the yolks one by one.Add the salt and flour and continue to beat only until combined.

    Take about 5-6 tablespoon of the batter, add a colour of your choice and pipe a design of your choice onto a parchment lined cookie tray with raised edges. Bake for 2 minutes.

    Pull out of oven and pour rest of the batter over the pre baked pattern. Cover loosely with foil (it should not touch the batter) and bake in lower part of oven for 10 minutes only. (I generally hover around the oven to make sure the swiss roll is not browning too much, if it does, pull it out.)

    While baking, prepare a large clean kitchen towel /wax paper by spreading it on a flat surface and sprinkling it lightly with powdered sugar.

    Turn hot cake out onto tea towel and pull off the parchment paper gently. Roll the towel up loosely and allow the cake to cool in this rolled position.

    When cool, unroll and fill with fresh whipped cream and fruits of your choice and roll it back.
