Ingredients

2-serving
  1. 20 - 24 baby bella mushrooms
  2. 6 Ounces cream cheese softened
  3. 1/4 Cup cheese parmigianno regianno
  4. 1 Teaspoon taco seasoning
  5. 1 green onion
  6. 1 Cup cheddar cheese , grated
  7. Pinch salt
  8. Pinch pepper
  9. 1 Cup enchilada sauce

Method

  1. Add Photo

    Preheat oven to 375 degrees. Lightly grease baking dish with non stick cooking spray and set aside.

  2. Add Photo

    Remove stems from mushrooms and wipe caps with damp cloth to remove any dirt. Place into baking dish.

  3. Add Photo

    In a small bowl, stir cream cheese to soften. Pour in parmesan cheese, taco seasoning, green onion, 3/4 cup cheddar cheese, salt and pepper.

  4. Add Photo

    Spoon filling into cleaned mushrooms. Pour enchilada sauce over top. Sprinkle with remaining 1/4 cup cheddar cheese. Bake 20 minutes until browned and bubbly. Serve hot.
