Ingredients

  1. 2 cups Potatoes cubed
  2. 1 cup Carrots chopped
  3. 3 - 4 Green beans
  4. 1 Onion small sliced
  5. 1.5 inches Ginger julienned
  6. 2 - 3 Green chillies
  7. 1.5 cups Coconut milk
  8. 2 sprigs Curry leaves
  9. to taste Salt

Method

  1. Add Photo

    In a pressure cooker or a vessel, add all the vegetable ingredients, salt, curry leaves, pour 1/2 cup coconut milk and cook the vegetables. If in a pressure cooker, just 1 or 2 whistles are required. The coconut milk will curdle and thats alright.

  2. Add Photo

    Once cooked, add the remaining 1 cup coconut milk.

    Mash some of the potato so that the gravy gets thicker.

  4. Add Photo

    Warm it again. Make sure you remove from the stove much before it reaches boiling point.

    Check for salt.
