When you have hardly any veggies in your fridge... just throw all that you have together and make a neat fry..
Chop, slice or dice the cleaned veggies
Add all ingredients except oil, into a pan.
Cook slow on low flame with the lid on. Stir once in a while to ensure it does not get burned.
Once cooked, pour 2-3 spoons of oil and fry to your liking, stirring now and then. Garnish with curry leaves.
