Ingredients

60 mins
8-serving
  1. 2 Bananas Ripe -
  2. 2 Eggs -
  3. 2 Cups Flour -
  4. 1 Cup Sugar -
  5. 1/4 Cup Yogurt -
  6. 1/2 Cup Butter -
  7. 1/2 Cup Oats -
  8. 3/4 Tsp Baking Powder -
  9. 1/2 Tsp Baking Soda -
  10. 1/4 Tsp Cinnamon -
  11. 1/2 Tsp Salt -
  12. 1 Tsp Vanilla Extract -
  13. 2 Tbsps Milk -
  14. Optional Chocolate Cooking -

Cooking Instructions

  1. 1

Pre-heat the oven to 180 degrees.

  2. 2

Grease two 9-inch cake pans. I used one 9-inch pan and a muffin tray for 12.

  3. 3

Separate egg yolks from the white and whisk the yolk for two minutes.

  4. 4

Whisk the butter and sugar until creamy. Add egg yolks and whisk again.

  5. 5

Whisk the egg whites for three minutes and add it to the mix.

  6. 6

Add in yogurt, vanilla extract and milk.

  7. 7

Mash the bananas and add the puree into this batter. Whisk for two minutes.

  8. 8

Sift the flour, baking powder, baking soda, cinnamon and salt and add this dry mix to the batter. Add the oats too. Stir the batter by folding it in, avoid using the whisk after flour is added.

  9. 9

    Add chocolate chunks.

  10. 10

Pour your batter into the cake pan or muffin tray and bake for 30-40 minutes at 180 degrees.

  11. 11

Insert a clean toothpick into the center of the cake until it is all the way in. If crumbs cling to the toothpick, the cake isn't ready yet. If nothing sticks to the toothpick, the cake is ready to be taken out of the oven.
