Sprouted moong pulao with an entirely new set of veggies

Ingredients

2-serving
  1. 1 cup Rice
  2. to taste Salt
  3. 1 cup Onion chopped
  4. 2 cups Eggplant cube
  5. 1 cup Carrot cube
  6. 200 grams green gram Sprouted
  7. 1 tsp Turmeric
  8. 1 tblsp Oil
  9. 1 tsp Cumin seed
  10. 1 tsp Mustard seeds
  11. 2 Green chillies chopped
  12. two cloves Garlic

Method

20 mins
  1. Add Photo

    Wash the rice and soak it for 10 minutes

  2. Add Photo

    Add the carrot, eggplant cubes and sprouted green grams to the rice

  3. Add Photo

    Add turmeric and salt to taste

  4. Add Photo

    Cook the rice at medium flame

  5. Add Photo

    Meanwhile, heat oil in a tawa and add the mustard seeds.

  6. Add Photo

    When they pop, add jeera, onion, chillies and garlic

  7. Add Photo

    Sauté for a minute

  8. Change

    Add the sautéed mixture to the cooked rice and mix well

  9. Change

    I prefer to serve it with some crips wheat Khari, and chilly flakes to garnish. Optionally add coriander leaves for garnishing.
