Wash the chicken well, trim off fat, if any. Make sure the breast pieces are even. If needed, slice it from the middle horizontally. Cut into smaller pieces. 2-3 inches.
Preheat the oven to 180 C. In a bowl, mix bread crumbs, pepper and salt.
Dip the chicken pieces in egg white and roll it in pepper crumbs mixture. Place it on a parchment lined baking sheet. Roast it for 20 -25 min.
Take it out from the oven and place on a serving platter. Melt butter in a pan, throw in a pinch of grounded pepper and lemon juice. Drizzle this lemon butter Sauce on fresh out-of-the-oven, Pepper Crusted Chicken.
