Oven Roasted Herbed Chicken

A simple, tasty no frills dinner. Got the fussy 4 year old to eat it and love it and the Lord knows that's an accomplishment! :)

Ingredients

2-serving
  1. 4 Chicken drumsticks with skin
  2. 4 Tablespoons Olive oil
  3. 1 Teaspoon rosemary Dried
  4. 1 Teaspoon thyme Dried
  5. 1 Teaspoon chives Dried
  6. 2 Cloves Garlic finely chopped
  7. To Taste Salt
  8. To Taste Pepper

    Combine herbs, garlic and olive oil for the marinade.

    Put about 1 tsp of marinade per drumstick under the skin and massage it in. I didn't let the chicken marinate because I was in a hurry, but ideally let the herbs soak in for about 20 min.

    Pre-heat the oven to 200 degrees C. Place the drumsticks skin side up in a greased baking pan. Add salt and pepper and bake in the oven for 30 minutes. Baste with remaining marinade after around 15 min.

    Broil for another 5 min to brown the chicken

    Serve on a bed of mashed potato with steamed vegetables on the side.
