Pepper Chicken Roast

Chicken pieces cooked with black pepper and spices , typical Kerala style preparation. One of the tastiest chicken dish I have ever cooked.

  1. 1 Kilogram Chicken `
  2. 5 Cups Shallots (Small red onions) chopped
  3. 2 Cups Coconut cuts
  4. 2 Tablespoons Garlic chopped
  5. 2 Teaspoons Ginger crushed
  6. 3 Teaspoons Chilli Powder
  7. 2 Tablespoons Coriander Powder
  8. 4 Teaspoons Chicken Masala Powder
  9. 2 Tablespoons Pepper Powder
  10. 1 Tablespoon Pepper Crushed
  11. Curry leaves
  12. Oil

  1. Add Photo

    Cut chicken into small pieces and marinate with 2 tsp chilli powder,2tsp chicken masala,1tbsp pepper powder and salt and let it Marinate for 30 min.

    Heat oil in a pan and add the chopped onions,ginger,garlic and coconut cuts.Saute it well until they turn golden brown.Add curry leaves and saute for 2-3 min.

    Add Coriander Powder, Chicken masala and chilli powder roast it well till the raw smell goes.

    Add the marinated chicken and sauté for 5 min.

    Cook chicken by adding enough water.(Make sure that the chicken should be completely immersed in water.) and put a lid on the pan.

    Once the chicken is cooked remove the lid and add pepper powder and crushed pepper.

    Saute this mixture well for another 20-30 min until it is dry and brown.

    Garnish it with curry leaves and serve hot.
