Spicy..Delicious...Authentic Kerala Chicken Roast!!

Ingredients

4-serving
  1. 750 gms Chicken -
  2. 2 tbsps Coconut (Grated Fresh) -
  3. 1 tbsp Corriander Powder -
  4. pinch Cumin seeds - A
  5. 1 tbsp Garam Masala -
  6. 1 tbsp Red Chilli Powder -
  7. 1 tsp Pepper Powder -
  8. 1 tbsp Ginger/Garlic Paste  -
  9. 4 nos Green Chillies -
  10. 3 nos Onion Shallots -
  11. 2 tbsps Oil -
  12. pinch Turmeric powder - a
  13. 2 Curry Leaves - springs
  14. 2 Corriander Leaves - springs
  15. Salt -  as per taste

Method

60 mins
  1. Blank step
    Add Photo

    Take Chicken  clean and marinate  with chili powder,coriander powder, ginger/garlic paste,turmeric powder and salt.Mix well and keep aside for 4 hours.

    Add Photo

    Take a pan and add oil,cumin seeds,shallots sliced,curry leaves.Mix well and add grated coconut

    Add the marinated chicken and mix well.Close the lid and cook till the chicken is done.

    Once the chicken is 90% done add pepper powder,green chilies,  Garam masala and cook till the chicken is dry.Do not cover with lid now.

    Once the chicken is dry garnish with fresh curry leaves and coriander leaves and serve.
