Ingredients

  1. 1 potato
  2. 2 Pounds sugar powdered
  3. 1 peanut butter
  4. 1 Teaspoon vanilla extract

  1. Boil 1 medium sized potato until a fork stuck in middle goes in easy. Potato should be very soft. Let chill in fridge at least one hour. Remove skin and mash in a bowl. Begin adding powdered sugar and mixing with potato. Add vanilla extract before mixture gets thick.

  2. Continue adding sugar and mixing until it is thick enough to spread and roll out with a rolling pin. Should be about as thick as making a pie crust.

  3. Spread potato mixture out on wax paper using powdered sugar to help ease of rolling out. Roll to about 1/4 inch thickness or less.

  4. Spread peanut butter over potato mixture to about 1/8 inch from all edges. Begin to roll up into a log.

  5. Wrap rolled log in wax paper and put in fridge to chill. At least one hour (longer is better)

  6. Cut into little "wheels", and enjoy!
