A fermented springtime drink made from purple carrots.
Mix everything and place in a glazed clay pot or similar vessel.
Seal the mouth of the vessel with clean muslin or cheesecloth and secure with string.
Leave to rest in a sunny spot for 4-5 days, stirring occasionally.
To serve, ladle a little of the purple liquid into a glass and plonk a few pieces of pickled carrot. Enjoy at room temperature or cold on a warm summer day.
