Lamb curry is popular dish from the Kashmiri cuisine known as Rogan josh. Meaty lamb cooked exceptionally well in a delicious blend of aromatic spices and flavours indulging your taste buds in a creamy, rich, spicy, aromatic and exotic meat dish!!
Clean and wash mutton pieces. Drain water and keep it aside.
Roughly grind the onion, shallots, green chillies, garlic and ginger in a blender.
Heat ghee in a pan and saute the above mixture adding turmeric powder, chilli powder, pepper powder and garam masala and salt.
Now transfer the masala to the pressure cooker and add the washed mutton pieces along with curd and enough water for boiling.
After the mix is cooked properly, add the tomatoes, lemon juice, coriander leaves, mint leaves and garam masala a pinch.
Cook further for 4 to 5 minutes more. Now add some ghee and stir well.
Taste and adjust salt and seasoning's.
Garnish it with coriander mint leaves.
