Pastelon de Platano Maduro
This dish was created for the subreddit, /r/52weeksofcooking, where the theme was "bananas". I knew I wanted to make an entree rather than a breakfast or dessert because that has been done before and I have never cooked with plantains before. This was actually pretty good even though my finger is still sore from peeling all of the plantains. It did come out a bit dry though so I suggest making a gravy with it or adding some water while cooking the filling which I did not do. Instead I covered it with sriacha and salsa (not picture) and it was still delicious. Next time, I definitely will add a bit more veggies to the filling as well.
