Pork with Koorka

A typical pork dish made by Christians in Kerala especially in Trichur.

Ingredients

  1. 1 kg Pork cut in to pieces
  2. 500 gm Cleaned koorka
  3. 1 tsp Ginger
  4. 1 tsp Garlic
  5. 15 Shallots , thin sliced
  6. 2 sprigs Curry leaves
  7. 1 tsp Chilli powder
  8. 1 tsp Coriander powder
  9. 1/2 tsp Turmeric
  10. to taste Salt
  11. 4 tbsps Coconut oil
  12. Shallots ,  thin sliced
  13. 1 tsp Garlic
  14. 1 tsp Ginger
  15. 2 sprigs Curry leaves
  16. 1 1/2 tbsps Coriander powder
  17. 1 1/2 tbsps Chilli powder
  18. 1 tsp Garam masala
  19. 1 tsp Fennel ,  ground

Method

    Add Photo

    Combine cleaned pork in a pressure cooker with ginger, garlic, shallots, curry leaves, chilli powder, coriander powder, turmeric and salt. Cook till the pork is done.

    Turn off the heat, add the cleaned koorka to the pork and cook covered untill koorka is cooked well.

    Heat the oil in a pan, add shallots, ginger and garlic. Saute until the shallots become light brown.

    Add chilli powder, coriander powder, black pepper, ground fennel and garam masala and saute well and then add curry leaves.

    Add the cooked pork to this and mix well. Saute till almost all the liquid has evaporated.

    Serve hot with rice and curries.
