Chicken Cacciatore

I used a cast iron pot (covered in porcelien). This dish will be cooked on a very low heat. Rather than using a electric slow cooker, cast iron pot gets direct heat and therefore gives the dish a rich character.

  1. 1 1/4 Whole Chicken chicken " cut up skinned slits in pieces .
  2. 1 Tablespoon Kosher salt
  3. 1 Tablespoon Black Pepper
  4. 1 Tablespoon Garlic Paste
  5. 2 Teaspoons Oregano
  6. 2 Teaspoons Basil
  7. 1/2 red bell pepper sliced
  8. 1 Onion Medium sliced
  9. 1 Can Tomatoes (whole)
  10. 1 Cup white wine
  11. 1 Tablespoon Olive Oil

    Rub the chicken with Garlic and all salt, pepper generously, inbetween slits. Heat oil in Pot over medium heat. Put chicken skin down and cook 2 mts. Turn over chicken and sprinkle oregano and  basil. Add red bell pepper, onions, Tomatoes and wine. Turn heat to medium high for 1 minute. Now reduce heat to minimum and cook covered for 2/3 hours. Serve with Pasta and grated Parmasean cheese.
