Sweet potatoes are an excellent source of vitamin A . They are also a very good source of vitamin C, manganese, copper, and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, B2 and phosphorus.
Peel the sweet potatoes and cut it to half lengthwise if you have large ones. Then cut to thin slices.Add them to salted water immediately.
.Heat a nonstick pan with oil, add mustard. When they crackle add grated garlic and curry leaves. Add the onions and Green chilly
Drain off the water completely from sweet potatoes and add them to the pan. Sprinkle turmeric.
Fry for about 3 to 5 minutes,stirring evenly.
Cover and cook on a low flame till they are cooked fully and turn tender.Keep stirring in between.
