Punjabi Toor Dal

This is a classic Punjabi Toor Dal from Amritsar. You can add vegitables of your choice. I decided to add boiled potatoe and Yellow squash. It is totally delicious and healthy.

  1. 1 Cup Toor water Soaked in cold
  2. 1 onion Medium chopped
  3. 1/4 Red Bell Pepper chopped
  4. 1 / chilli GreenRed Fresh chopped
  5. 1 Squash Ylooow sliced small
  6. 1 salt water Large potatoe boiled in
  7. 1 Teaspoon Salt
  8. 1 Teaspoon cumin seeds
  9. 1 Tablespoon Masala Vegetable
  10. 1 Tablespoon Ginger/Garlic Turmeric / Paste
  11. 10 Curry Leaves
  12. 1 Can Tomatoes
  13. 2 Tablespoons Oil
  14. 1/2 Teaspoon Heeng
  15. 1/2 Teaspoon Methi seeds
  16. 1/2 Teaspoon Mustard seed

  1. Change

    Heat 3 cups of water in a pan. Add Toor Dal, add 1 teaspoon salt. Bring to a boil and let it simmer for 20 minutes on slow heat until cooked.

  2. Change

    In heavy bottom pan add 2 tablespoon oil and heat on medium heat. Add cumin seeds, mustard seeds, onions, bell peppers, vegetable masala, Ginger/Garlic, Methi, curry leaves, chilli pepper.  Cook 2 minutes and add 1/4 cup water. Add Squash and cook 10 minutes covered - add a little water if necessary. Now add tomatoes and potatoes and cook 10 mts.

  3. Change

    Add cooked lentils and add Heeng and simmer on slow heat for 5 mts. Serve hot.
