Christmas Fruit Cake

A very very Christmas-sy fruit cake full of joy!

Ingredients

14-piece
  1. 3/4 cup All purpose flour
  2. 2 numbers Egg
  3. 2/3 cup Sugar Granulated
  4. 1/2 cup Vegetable Oil
  5. 3/4 cup Dry fruits (chopped)
  6. 1/4 cup Water
  7. 2 tablespoons Cranberry sauce (optional)
  8. 2 tablespoons Vanilla essence
  9. 1 teaspoon Baking powder
  10. 2.5 tablespoons flour All pupose (for dusting fruits)

Method

    Add Photo

    Add the water, 1/3 cup sugar, Vanilla essence, cranberry sauce and fruits in a sauce pan and bring to a boil

    Once boiled, turn off the heat and let it cool

    Prepare the cake tin by brushing with oil and dusting with the flour, or use a non stick cooking spray

    Mix all the remaining ingredients together thoroughly (except the flour for the fruits)

    Preheat your oven at 200 degree Fahrenheit for 10 minutes

    Strain the fruits from the liquid and toss in flour so that all the pieces are coated with a thin layer of flour

    Add the strained liquid to  the batter and mix well

    Now slowly fold in the fruits into the batter

    Pour into the cake tin evenly

    Place in the oven

    Bake at 360 degree Fahrenheit for 50 minutes

    Test by inserting a skewer or a spaghetti stick, if it comes out clean your cake is done

    Remove from oven and let it cool down completely
