Shakshouka Too

Shakshouka Too is a dish with a medley of ingredients that push the calories up from my other version of this dish (330 calories but still 4 of over5aday). You can add more spices if you choose but too much chili and the contents seem to blend into one flavour so its almost better to stick to the lower calorie version (160 calories)!

  1. 2 eggs large
  2. 150 g chicken sausages low fat / 5 oz .
  3. 250 g potato (small cubes - skin on) / 9 oz .
  4. 80 g onions (diced) / 3 oz .
  5. 80 g pepper green (diced) / 3 oz .
  6. 80 g mushroom diced / 3 oz .
  7. 400 g plum tomatoes chopped / 14 oz . cans
  8. ½ teaspoon black pepper ground
  9. Basil leaves (chopped)
  10. “ Spray2Cook ” (a word used to describe any low-cal. non-stick cook’s oil spray)

    Throughout cooking until the eggs are added keep the contents of the pan moving.

    Microwave the potato for 5 minutes. Spray a fry pan with Spray2Cook and put on a medium to high heat - add the microwaved potatoes.

    Microwave the pepper and onion for 2 minutes – add to the potato. Add the mushrooms and cook until the mushrooms have softened.

    Add the tomato, basil and pepper. Bring to the boil then turn down to a simmer.

    Create two pockets in the mix to expose the base of the pan. Spray the pockets with Spray2Cook. Crack an egg in each pocket. Leave the pan on the simmer until the egg white is firm.
