I didn’t grow up with meatloaf. There were probably four times, at most, it was served to me during my childhood. My introduction to the dish really came in college, where my cafeteria sometimes produced a surprisingly decent turkey meatloaf with arugula in it. So when I crave meatloaf now, I’m usually not thinking of the normal stuff.
I knew exactly how I wanted to make this from the instant the craving hit, and it turned out exactly as planned. I might spice it up even more next time, but it’s very tasty as it is.
