Some Sundays, when you are hangovered and thus dead angry, too lazy to go out shopping for food (and everything is closed anyway), it can come in handy to use your imagination to come up with the perfect brunch with just what's left in your fridge. Here are few tips to turn your left mashed potatoes, bacon, butter and egg in a posh Eggs benedict. Sounds fancy, well it also rhymes with easy.

Ingredients

  1. 3 potatoes Mashed
  2. Goat cheese
  3. 100 g butter
  4. 2 eggs
  5. Parsley Coriander and
  6. half Lemon
  7. 1 strip Bacon
  8. Salt Pepper and
  9. White wine vinegar

Method

    Prepare your Hollandaise sauce: Melt the butter and add it slowly to an egg yolk with the lemon juice and a tablespoon of hot water. Wisk until you obtain the right consistency. Add salt and pepper.

    Add the cheese, parsley and coriander to your mash, then salt and pepper to your convenience. Form patties.  Cook it for 2 minutes on each side with the bacon strip.

  3. Change

    Add two tablespoons of vinegar to boiling water.  Once your water is boiling, turn the gas down and put your cracked egg in the water. Leave it for 1 minutes then drain it before serving everything.
