Linguinne Pasta with Dandelion Greens

Dandelions are bitter Greens and very healthy. It makes a quite tasty dish with Pasta.

  1. 1 Bunch Dandelions water rinsed in cold .
  2. 1 carrot medium size diced into small pieces
  3. 1 lb Pasta Linguinne .
  4. 2 Teaspoons Salt
  5. 1/2 Teaspoon Black Pepper Cracked
  6. 1 Teaspoon Masala Vegetable
  7. 1/2 onion medium chopped fine
  8. 1/2 Teaspoon cumin seeds
  9. 6 Cloves Garlic Fresh Mashed
  10. 2 Olive Oil Table spoon
  11. 2 Quarts Water
  12. 2 cheese Table spoon Peccorino grated
  13. 1 tomato Medium Size chopped
  14. 1 teaspoon Tamarind Paste .

    Add Photo

    Use a large Pot and Boil water. add 1/2 teaspoon salt.

  2. Change

    Cut 1/2" stems of Dandelions. Cut into 1/2 all the stems and leaves. Add to boiling water. Bring to a boil and let it simmer for 15 minutes. Drain and save the Water. Put boiled dundelions aside.  Boil diced carrots for 3 minutes in salt water.

    In a seperate Pan add 1 tablespoon olive oil. Add cumin seeds, cook 1 minute, add all the garlic, onions, add vegetable masala and boiled carrots. Cook 2 minutes. Now add boiled dandelions, add 1/2 teaspoon salt, (1 chopped green chilli), chopped tomato and simmer for 10 mts. covered.

  4. Change

    Bring dandelion water to a  boil in the same pot, add 1 teaspoon water and 1 lb. of Linguinne Pasta, boil it for 7 minutes. Drain Pasta and Add it to the Dandelions. Add 1 tablespoon of olive oil. Mix it well and serve with Grated cheese on top.
