Potato, Spinach and Squash fry

There is nothing as delicious as a nice bowl of veggies. Squash and Potato are my daughter's fav veg, and I had a bag of spinach sitting in the fridge waiting to be used in some form as I added it to the dish as the last ingredient. I served it with some jeera rice and a curry over the weekend but these will go great with rotis as well. As you will see below, this is a quick and easy recipe, so it's a perfect week night dish that can be made once you are home from work!

Ingredients

  1. 4 potatoes medium sized
  2. 1/2 squash medium sized
  3. 1 bag spinach leaves
  4. 1 onion diced
  5. 1 tomato large chopped
  6. 1 tbsp garlic paste
  7. 1 tbsp ginger paste
  8. 1 tsp turmeric powder
  9. 1 tsp coriander powder
  10. 1 chile green slit lengthwise
  11. 1/2 tsp mustard seeds
  12. 1/2 tsp cumin seeds
  13. 1 sprig curry leaves
  14. to taste Salt
  15. 2 tbsps oil

Method

    To the heated oil, add the mustard seeds, cumin seeds, curry leaves and the chile. As the mustard sputters, add the diced onion, and saute until the onions have softened.

    Next add the ginger and garlic pastes and the tomatoes. After a couple of minutes, add the spice powders, I did not add in chile powder, but if you do, add a 1/4 or 1/2 worth.

    Once the tomatoes get all mushy, add the potatoes and squash and season with salt. Cook this on medium low heat with a lid on the pot. Add a couple of tablespoons of water if needed.

    When the veg has cooked through, I added the spinach and gave it all a good mix. The spinach will wilt within a few minutes.

    Transfer to a serving bowl. This goes great with rotis or a side dish.
