Cilantro Lime Baked Salmon

I enjoy cooking Salmon at home, and try to include it here and there in our menu. Miss 2 year old isn't a fully convinced fan of salmon, but I sneak it in her meals whenever I can. Since we like salmon, I always like to try different flavours so it doesn't get boring.  That's how this recipe has come together!
I love the smell and flavour of coriander so putting that together with some lime gives this salmon fillet amazing flavour and smell and was just delish! Quick and easy to put together and definitely healthy. Pair this with a rice dish or pita bread with some salad and dips and you have a very nutritious meal prepared

  1. 2 Salmon fillets
  2. 2 tbsps olive oil
  3. 2 cloves garlic
  4. 1 lime Juice and Zest of
  5. Handful cilantro of leaves
  6. to taste Salt Pepper and

    Preheat the oven to 200C

    Process the olive oil, cloves, lime juice and zest, cilantro in processor until its a nice smooth paste

    Rinse the salmon, pat dry with paper towels and place skin side down on a baking tray lined with foil or baking paper. Season with salt and pepper. Spread the cilantro lime puree on the fillet and bake in the preheated oven for about 15mins
