Meyer Lemon Garlic Salmon

This dish was prepared for the subreddit, /r/52weeksofcooking, where the theme was "local ingredients" and my second theme was "citrus". You know what the pacific northwest does not grow a lot of? Damn citrus. Then while researching this, I found a couple meyer lemon farms. Mix that with the fact that salmon is everywhere, I got myself a dish. Normally I do not like seasoning my salmon with too much stuff because I just like the taste of salmon but this came out incredibly good. Full of flavour, the skin cooked perfectly, and it flaked off just looking at it.

Ingredients

4 servings
  1. 1 lb Salmon (skin on)
  2. 3 Tablespoons Lemon Juice Fresh Meyer
  3. 1 Tablespoon Butter , melted
  4. 2 Cloves Garlic , chopped
  5. 1 teaspoon Parsley Dried
  6. to taste Pepper

    Preheat over to 375 degrees.

    Prepare a baking sheet. You can use butter, oil, or non-stick spray.

    De-bone the Salmon, if needed, pat dry with a paper towel, and place on the baking sheet.

    Juice the Meyer Lemon and pour over the Salmon, melt the Butter and drizzle over the Salmon, chop the Garlic, and sprinkle the chopped Garlic, Parsley, and Pepper over the Salmon.

    Bake until the Salmon flakes with a fork (about 8 - 10 minutes).
