Nutty cinnamon-orange cake

We were expecting guests today and thoughts were all over my mind about what to prepare. Finally one of the thoughts hit right and “Bingo”, I decided to make a Pista Orange cake. I had read it on the ocado.com site some time back and had always wanted to try it out. Started the preparation and added a lot of variations to the original recipe to experiment and make something different out of it.  Voilà, here it is, beautiful and delicious.

Ingredients

  1. 150 gms All-purpose flour
  2. 150 gms Butter margarine or
  3. 150 gms Caster sugar
  4. 125 gms Yoghurt
  5. 50 gms Almond powder
  6. 1 tsp Baking powder
  7. ½ tsp Baking soda
  8. 2 Eggs
  9. ¾ cup Orange juice
  10. 1 tsp Vanilla essence
  11. 100 gms Pistachios chopped
  12. ½ tbsp lemon Zest of .
  13. ½ tsp Cinnamon powder

Method

  1. Blank step

    Pre-heat the oven at 180 degrees

    Grease and dust 9 inch pan

    Mix  together flour, baking powder, baking soda.

    Beat butter and sugar well till its creamy and pale

    Beat the eggs in butter-sugar mixture one at time, add almond powder and mix

    Add vanilla essence, cinnamon powder,  lemon zest, yoghurt and orange juice

    Add  1/3 of flour in  butter mixture.

    Then add the rest of flour and mix well

    Fold in-the pistachios

    Pour a batter in pan and bake it for 35-40 minutes or till tooth picks comes out clean

    Cool it for few minutes and then transfer it to wire rack to cool completely

    Dust the top with icing sugar
