KACCHEY AAMKIKHATTIMEETHICHUTNEY
Mango is a fruit which brings joy and happiness whether its unriped or riped. The mango is versatile fruit as we can make ice-cream, juices, shakes, lassi, cakes, desserts and so on
The raw mango is equally versatile as we can make a number of things out of it like panna, chutneys, pickles,murabbas.
It is also used in making of curries, dals, salads etc
One of its form I want to share is below
Ingredients

4 mangoes (grated) Raw

1 inch Ginger piece grated

¼ tsp Turmeric
-
½ tsp Red chili flakes
-
Salt as per taste
-
Jaggery as per the sweetness required
-
1½ tsps Panch phoran (cumin, methi seeds, saunf, nigella seeds, mustard )

Curry leaves few
-
2 tbsps Vinegar
-
2 tbsps Oil
-
Water as needed
Cooking Instructions

Heat the oil in pan, add panch phoran

Add grated ginger and curry leaves,fry for a minute

Add grated mangoes,salt and turmeric

Add water in a pan (keeping in mind the thickness of the chutney), let it cook for a while

Add jaggery, chili flakes let it simmer for few minutes

Lastly add vinegar, allow it to cook till thick
