Sheer korma / sheer khurma

Come Eid and there is talk about the renowned dish of Eid-ul-Fitr called Sheer Kurma.All of us desperately wait for holy month of Ramadan and at the sweet end is the feast time where we meet and greet our loved ones and enjoy savories of Sheer Kurma.This festive special and delicious dish made out of milk can serve as a great dessert at multiple auspicious occasions.

Ingredients

  1. 2 litres Milk
  2. 110 gms Sugar (may vary according to sweetness preferred)
  3. 100 gms vermicelli Fine
  4. 25 - 30 Almonds (blanched,peeled and slivered)
  5. 25 - 30 Pistachios ( blanched, peeled and slivered)
  6. 4 - 5 Dates (chopped)
  7. 3 tbsps Chironji (charoli nuts) (soaked and skinned removed)
  8. 100 ml Ghee
  9. ¾ tsp Cardamom powder
  10. 2 - 3 cardamom Green
  11. 2 - 3 Cloves
  12. Pinch of strands Saffron

Steps

  1. In a pan, heat 75ml ghee, sauté slivered almonds, pistas, chirongi and dates till golden(but not burnt), remove and keep it aside

  2. In same pan, roast vermicelli till golden (but not burnt), keep it aside

  3. In heavy bottom pan, bring the milk to boil

  4. Once start boiling, add cardamom powder and simmer on low heat till milk turns pink in color

  5. Add sugar, saffron and stir till sugar dissolves

  6. Add roasted vermicelli, and dry fruits and simmer for another 8-10 minutes, stir occasionally to avoid burning

  7. In a small pan, heat the remaining ghee, add green cardamom and cloves and fry for 30 seconds

  8. Pour the tempering over the prepared sheer kurma

  9. Dish out, garnish with few saffron strands and serve hot
