Jeera Rice

This is a very simple recipe for making Cumin Rice. Traditionally there are two methods of making Cumin Rice. The first method the spices are sauteed first in oil and the rice is cooked along with the spices. this technique is mostly used in restaurants (This recipe). The second method is where the whole spices are fried first and the rice is cooked along with the spices. this method is similar to that making of pulao.
If you want a fully spiced rice flavour than the second method would be the better option. The flavor of jeera/cumin and the whole garam masala combines really well. You can add black peppercorns/kalimirch, mace/javitri and additional spices to it. In this method you can also add some onions while making the rice. It is worth mentioning that the cooking time takes longer.
The reddish orange and yellow color is saffron or turmeric. If you want to add some color, then add either of them.
Serve jeera rice hot or warm with a dal or vegetable/paneer curry

Ingredients

  1. RICE COOKING OF
  2. 1.5 cups basmati rice
  3. 5 cups water
  4. RICE TEMPERING THE
  5. 2 tbsps oil
  6. 2 tsps cumin seeds / jeera
  7. 1 tbsp coriander leaves / dhania chopped patta
  8. 1 bay leaf / tej indian patta
  9. 2 - 3 cardamom elaichi green //hari
  10. 2 cloves /lavang
  11. 1 tsp salt or as required
  12. 2 - 3 star anise petals of /badian
  13. 1 tbsp ghee

Method

    Add Photo

    Take 2 cup basmati rice and rince under water until water runs clear of starch. Soak the rice for 30 mins and keep aside.

    Boil water and add rice and salt. Simmer the rice on a low flame uncovered.

    The rice grains should be cooked till tender and yet separate. Drain the remaining water and keep the cooked rice aside.

    Heat oil in a small pan. add cumin seeds and let them crackle.

    Lower the heat and add the cardamom, cloves and star anise. stir for 1-2 minutes. Turn off heat and keep aside for a minute.

    Gently mix the tempering with a folk to the rice grains. Even if some rice grains break, its alright.

    Garnish jeera rice with coriander at the time of serving.
