Wash and chop the spinach well.Steam in a pot or microwave for 5 mins till cooked and drain out the moisture very well.
In a pan, add butter and bit oil, and saute the garlic and onion till nicely done. Next, add the flour and make a roux mixture.
Slowly add the milk, stirring constantly. As mix gets thicker keep adding remaining milk and cream.
Add the seasonings and spices.
Next, add the spinach and season with salt and pepper.
Grate or put the shredded cheese and mix well on low heat. Grate Parmesan cheese and let it cook another 2-3 mins.
Finally add the chicken stock, the sour cream and mix well
Serve with either pasta, toasted garlic bread or just on along with any pita bread. Enjoy!
