Chilli Beef Mushroom Garlic Stir Fry.

Ingredients

9-12-number
  1. 1 Beef steak cut into mini cubes
  2. 8 - 10 quartered Mushroom Cremini button or
  3. 1 Capsicum green or yellow chopped
  4. 3 - 4 chillies Red
  5. 4 - 5 garlic big
  6. 1 Ginger piece chopped
  7. 1 - 2 tbsps dill leaves chopped
  8. 1/2 cup Onion white
  9. 1/4 cup green beans beans or French
  10. 1/4 cup Corn
  11. 1/4 cup Carrots
  12. 2 tsps Soy sauce
  13. 1 tbsp Oyster sauce
  14. 1 tbsp Barbecue sauce
  15. 1/2 tbsp Mustard paste
  16. 1/2 cup stock water or
  17. 1 - 2 tbsps Butter
  18. 2 - 3 Green onion to garnish
  19. Coriander leaves chopped garnish
  20. 1 tsp Lemon juice
  21. 1 - 2 tsps Brown sugar
  22. 1 tsp Turmeric
  23. 1 tsp Pepper powder
  24. 1 tbsp Red chilli powder
  25. 1 t Coriander powder
  26. 1 - 2 tSps garam masala
  27. 1 tsp rock salt coarse or
  28. to taste sea salt

Method

    First make a rough crushed paste from the red chillies,garlic,brown sugar and coarse salt with lemon juice.

    Next, in a wok, add the butter with bit oil, and then add the paste, and sauté well. Add the roughly chopped onions along with ginger and did. Sauté well.

    Next, add the masala powders like turmeric, chilli, coriander and gram masala. Then add the chopped cleaned mushrooms and cook till brown and nicely cookEd.

    Then you can add half of the stock to the mushroom mixture and let it cook further more till all absorbed.

    Take off the mixture to a plate,return wok to stove and add bit more oil, and put the beef cubes in along with remaining stock and cook till half way tender.

    After the meat has browned and the thick sauce of the beef has reduced, return the mushroom mix to it, and cook on. Now add the precooked or frozen vegenables and keep cooking on low heat.

    Next, add the soya sauce, barbecue and oyster sauce. Stir well. Toss around. Check seasoning, adjust salt, pepper and sugar.

    Cook on for another 10-12 mins and till meat done well. Garnish with spring onions and freshly chopped coriander leaves.
