Whole wheat fenugreek garlic buns

Ingredients

  1. 1 ½ cups Whole wheat flour
  2. ½ cup All-purpose flour
  3. 2 tbsps wheat Vital gluten
  4. ½ tsp Instant dry yeast
  5. 1 tsp Sugar
  6. 1 tsp Salt
  7. 2 tbsps Oil
  8. 6 to 8 cloves Garlic (finely chopped)
  9. ¾ cup Fenugreek leaves chopped
  10. ½ tsp Chili flakes
  11. Sesame seeds for sprinkling
  12. ¼ cup Milk +for brushing
  13. 1/2 cup Water + for kneading

Method

    In a bowl, mix yeast, ½ cup luke warm water, sugar

    Keep it aside till mixture become frothy

    Add salt, oil, milk to yeast mixture, mix well

    In a large bowl,  mix whole wheat flour, all-purpose flour and vital wheat gluten

    Also add garlic, fenugreek and chili flakes, mix

    To the flour mixture, add yeast mixture and water little at a time, knead well to form a soft dough

    Transfer dough on work surface, lightly flour it and knead with the heels of the hands till dough become soft and elastic. This will take 8-10 minutes

    Transfer the dough in lightly oiled bowl

    Oil the dough and cover with cling wrap or damp towel and place it in a warm place for 1 hour or till it doubles in size

    Gently deflate the dough, divide the dough into 10-12 equal balls

    You can shape the ball according to your choice or leave it as round bun

    Place the buns on the greased tray at the distance of 1-2 inch as it will increase in size after second rising and during baking

    Cover it with damp towel and leave it to rise for another 1 hour

    Pre-heat the oven at 190 degrees

    Brush the top of the buns with milk and sprinkle sesame seeds

    Bake the buns for 12-15 minutes or till the done (brown)

    Serve hot with any type of gravies….....ENJOY!!!!
