Plum cinnamon hand pie

  1. 210 gms All-purpose flour
  2. 100 gms Butter (Ice cold)  (Cut in 1 inch cubes)
  3. 2 tbsps sugar Confectioners’
  4. 2 – 3 tbsps water Ice Cold
  5. 1/3 tsp Cinnamon powder
  6. 1 cup Plum (chopped)
  7. ½ cup Sugar + little for sprinkling.
  8. ¼ tsp Cinnamon powder
  9. 1 Lemon Zest
  10. 1 Lemon juice
  11. ¼ cup Milk for brushing.

    In a pan, put all the ingredients for the filling and cook till it becomes thick. (Thickness of a jam)

    Once done, allow it to cool completely.  Refrigerate it for sometime.

    Mix the butter, sugar, cinnamon powder and all-purpose flour with the fingers until mixture resembles coarse crumbs. Some may be the size of a pea.

    Then transfer mixture on work surface and knead very gently to bring them together to form a ball (Don’t knead it too much with your palm)

    Wrap the crust dough in plastic wrap and refrigerate it for 1 hour.

    Take the crust dough and roll it on a parchment paper into a 14x14 inch square with a thickness of  ¼ inch.

    Now cut it into pieces of desired shapes around 2.5 inches each. Each hand pie will need 2 piece of similar shape and size so its necessary you make even number of pieces and with a matching 1 to 1 pairs.

    Keep these pieces in a tray and refrigerate it for another hour.

    Preheat the oven at 180 degrees centigrade.Take out the pieces, put  ¾ tsp of the filling in the center of one piece. Cover it with another piece.

    Press the edges gently with a fork so the two pieces get sealed.  Arrange each pie on the baking tray.

    Prick at the center from top using a fork. Brush with milk on top and sprinkle some sugar on it.

    Bake it for 12 to 15 mins or till golden brown.

    Garnish with some chocolate if preferred or can be eaten plain.
