Delicious papaya badam barfi is ready to be served.

  1. 1 Papaya (Ripe) medium size (Finely chopped or grated)
  2. 250 gms Khova
  3. 100 gms Almond powder
  4. ½ tsp Cardamom powder
  5. ½ cup Sugar (if you prefer more sweet, you can add more)
  6. 3 tbsps Ghee
  7. A pinch of strands Saffron
  8. 2 drops Rose essence
  9. almonds Slivered
  10. of 1 strands saffron papaya Few medium will be approximtely 1 1/2 cup

    In a heavy bottom pan, add ghee and papaya. Saute on high heat for 5 mins stirring continuously.

    Add cardamom powder and almond powder, mix well and let it cook for 3 to 4 mins on medium flame. Stir occasionally to avoid burning.

    Add Khova, saffron, and 2 drops of rose essence. Let it simmer for 4 to 5 mins till khova is well combined.

    Finally add sugar, mix and sauté on high heat stirring continuously till mixture becomes very thick.

    Take it off the stove, immediately pour it on a greased tray or plate.

    Refrigerate it till set.

    Cut in squares or diamond shapes or any other shape of your choice.

    Garnish with slivered almonds and saffron strands.
