Savory zucchini-carrot loaf

NOTE :-  If you prefer to make this loaf eggless, you can add 1/4 cup of blended Tofu instead of egg for the below measurement.

Ingredients

  1. 1 ¼ cups All-purpose flour
  2. 1 Egg large
  3. ½ cup Olive oil
  4. 3 tbsps Cream
  5. ¾ cup Zucchini (yellow and green) grated
  6. 1 Carrot (grated)
  7. 1 Lemon juice
  8. lemon Zest of a
  9. ¼ tsp Nutmeg
  10. ½ tsp All-spice powder(garam masala)
  11. 1 tsp ginger Grated
  12. 1 tsp Sugar
  13. Salt as per taste
  14. 1 tsp Chili flakes
  15. 1 tsp Baking powder
  16. Baking soda ¼ tsp

Method

    Pre heat the oven at 180 degrees

    Line and grease the loaf pan of 8*5 inch

    Sift together flour, baking powder, baking soda

    In a bowl, beat together oil, sugar and egg till creamy

    Add lemon juice, lemon zest, nutmeg, chili flakes, ginger, salt, all-spice powder, cream and mix well.

    Gradually add flour mixture and mix well with spatula

    Fold grated zucchini and carrot till incorporated well

    Pour this batter in the loaf pan and bake it for 35-40 minutes or till knife comes out clear

    Cool it for few minutes

    Transfer on wire rack and cool completely
