A unique salad, with a sour-sharp flavour.
In a large mixing bowl, whisk together the malt vinegar, lemon juice and dijon mustard with a balloon whisk.
Add the oilve oil in a thin stream, whisking constantly. the idea is to form an emulsion of the oil and the acids.
Add the salt, black pepper, garlic and parsley. whisk well.
In asalad bowl, toss together the salad leaves, cucumber and cherry tomatoes.
