Malt-N-Dijon Dressed Salad

  1. 1 Teaspoon malt vinegar
  2. 1 Teaspoon lemon juice
  3. 1 Teaspoon dijon mustard
  4. 1/2 Cup olive oil
  5. 1/2 Teaspoon garlic , finely chopped
  6. 1/2 Teaspoon parsley , finely chopped
  7. To Taste salt
  8. To Taste black pepper , ground
  9. 2 Cups assorted salad leaves
  10. 1 Cup cucumber , cubed
  11. 1 Cup cherry tomatoes , halved

    In a large mixing bowl, whisk together the malt vinegar, lemon juice and dijon mustard with a balloon whisk.

    Add the oilve oil in a thin stream, whisking constantly. the idea is to form an emulsion of the oil and the acids.

    Add the salt, black pepper, garlic and parsley. whisk well.

    In asalad bowl, toss together the salad leaves, cucumber and cherry tomatoes.
