Gossamer Spice Cookies

this is a cookie loaded with spices... perfect to warm up with on a cold day! best downed with a cuppa hot cocoa or eggnog.

  1. 1 1/3 Cups all purpose flour
  2. 1/2 Teaspoon ginger , ground
  3. 1/4 Teaspoon cloves , ground
  4. 1/4 Teaspoon cardamom , ground
  5. 1/8 Teaspoon red pepper , ground
  6. 1/2 Teaspoon allspice , ground
  7. 1/3 Cup butter , softened
  8. 1/3 Cup molasses
  9. 1/4 Cup dark brown sugar

    In a medium bowl stir together the flour and spices (ginger thru red pepper); set aside.

    In a large bowl beat butter with an electric mixer on medium high speed for 30 seconds. add molasses and brown sugar, beat until combined.

    Beat in flour mixture until just combined.

    Divide dough in half; cover and chill for 1 hour or until easy to handle.

    Preheat oven to 375 degrees F. on a lightly floured surface, roll half of the dough at a time to 1/16-inch thickness.

    Using a 2-inch round scalloped cutter, cut out dough. re-roll scraps and repeat.

    Place cutouts 1 inch apart on an ungreased cookie sheet.

    Bake in a preheated oven for 5 to 6 minutes or until edges are just browned.

    Transfer cookies to wire racks. cool completely.
