Shortcut Pistachio Pudding Bundt Cake

This pistachio bundt is somewhat similar to my usual pistachio bundt cake recipe minus the orange zest or glaze. It's a short cut recipe in that it uses packaged yellow cake mix and Jell-O pistachio pudding mix! It's an absolute breeze to make and very VERY flavorful.

  1. 1 Yellow Cake mix Betty Crocker box
  2. 2 packages Jell-O pistachio pudding mix (3.4 Oz)
  3. 1 1/2 cups water
  4. 4 numbers eggs
  5. 1/4 cup vegetable oil
  6. 3 drops green food colour (optional)
  7. 1/2 cup pistachios slivered
  8. 1 cup sugar confectioner ' s
  9. 1 tablespoon butter
  10. 2 - 3 tablespoons milk

  1. Add Photo

    In a large bowl, combine cake mix, pudding, water, eggs, food color and oil.

    Add pistachios and mix to disperse evenly.

    Pour into a 10" bundt pan and bake at 350 °F for 45 to 60 minutes, till a toothpick inserted in the center comes out clean.

    Cool for 10 minutes in the pan, and then on a rack till completely cool.

    Combine the glaze ingredients adding just enough milk to reach desired consistency. Drizzle over the cake.

    OR use whipped cream or vanilla frosting.
