Bittergourd curry

Ingredients

  1. 1 big bittergourd
  2. 2 onions
  3. 1 full garlic
  4. 2 big tomatoes
  5. jaggery - size of a lemon
  6. tamarind pulp - size of a small lemon
  7. to taste salt
  8. oil for frying
  9. leaves curry
  10. mustard seeds for seasoning
  11. Channa dal for seasoning optional
  12. 2 tablespoons grated coconut
  13. leaves coriander
  14. sambar powder 2 teaspoon s

Cooking Instructions

    Cut bittergourd into cubes removing the seeds from inside.

  2. 2

    In a kadai add 4 tablespoons of oil and heat.

  3. 3

    Add mustard and curry leaves for seasoning till it splutters

  4. 4

    Add chopped garlic and onions and fry well

  5. 5

    Add chopped bittergourd and fry well.

  6. 6

    Add a little Jaggery and chopped tomatoes and fry well.

  7. 7

    Add salt as per your requirement.

    Add tamarind pulp and 2 spoons of sambar powder.

  9. 9

    Close the kadai and cook well.

  10. 10

    Add chopped coriander and grated coconut and continue to cook for some more time.
