Dry aloo palak
Ingredients

2 large potato (cubed)

2 cup chopped spinach

1/2 tsp pepper powder

1/4 tsp mustard seeds

1/2 tsp cumin seeds

leaves Few curry

1/4 tsp ginger garlic past (optional)

1 tsp white sesame seeds

Pinch asafoetida/ hing

1/2 tsp turmeric powder

2 tsp oil

1 tsp salt to taste
Cooking Instructions

Heat oil in a kadhai, add mustard seeds, cumin sheed and curry leaves and green chilli. Let them crackle.

Add ginger garlic past, saute a minutes, add cubed potato, hing, salt and turmeric powder, fry for a minutes.

Cover and cook till the potatoes are cooked fully, if required can sprinkle some water. You could even roast the potatoes after they are half cooked.

Add chopped spinach and fry on hing till all the moisture evaporates, this takes around 3 minutes.

Add sesame seeds fry for a minutes sprinkle pepper powder. Serve with roti/ rice.
