Being a great mother is a very difficult task because a mother always thinks about her children beyond expectations.My mother was a great mother.She was always worried about her children’s diet.We brothers and sisters used to skip milk every day and it wasn’t admitted to my mother.She started giving us milk in different forms.The most successful way was to prepare Rabri dry fruits Vermicelli and we relished very much.My mother taught me to prepare this ..when I was studying in higher class...since that time I’m preparing the dish even I also followed the same trick when my children used to skip milk..

Ingredients

3-4 servings
  1. 1 liter Full Cream Milk
  2. 1 Cup more milk
  3. 2 tbsp sugar
  4. 1/2 tsp Cardamom Powder
  5. 1/2 cup Finely Chopped Dry Fruits Cashews, Almonds, Pistachios
  6. 5-6 strands saffron
  7. 2 cups Vermicelli
  8. 2-3 tbsp ghee
  9. 10 Cashews chopped
  10. 10 Raisins
  11. 5-6 strands saffron
  12. 1/2 cup Mawa / Khoya grated
  13. 1.5 cups water
  14. 1 cup sugar
  15. 3-4 Green Cardamom crushed
  16. 1/2 tsp Kewra Water

Cooking Instructions

  1. 1

    Take a broad and thick bottomed pan. Pour milk in it and bring it to boil.
    Once the milk starts boiling, simmer the gas flames and let the milk reduce. This may take 30-35 mins or even more.

    Keep stirring in regular intervals just to avoid milk getting burnt from bottom.
    Meanwhile add cardamom powder, saffron strands and chopped dry fruit. You can also soak saffron in a small bowl of milk before adding. This will give immediate colour to the Rabri.

    Once you see the milk reducing, you will find the cream sticking all around the pan. Keep scratching it with a spatula and add in the milk. Don't forget to stir.Add sugar.

    Soak saffron in 2 tbsp milk and keep aside.
    Heat ghee in a wok and roast the Vermicelli till golden in colour. Collect in a plate and keep aside.
    In the same wok add 1 tbsp ghee and fry cashews, and raisins and collect aside.

    Add milk then
    Immediately add the roasted sewai and keep stirring till get thicker.
    Add fried cashews, raisins andsimmer the gas and cover the lid. Let the sewai cook till it dries up and is soft.

    When the sewai starts drying up, add saffron soaked milk and grated khoya and prepared Rabri,mix well. Cook for another 3-4 mins.
    Turn off the heat and add some kewra water for aroma.

    Garnish with some chopped cashews and serve warm.
