6-7 servings
  1. For sheet :
  2. 1/2 kg maida
  3. 125 gm oil or ghee
  4. 1 tsp ajwain
  5. to taste Salt
  6. For stuffing :
  7. 6-8 boiled potato
  8. 4-5 chopped green chilli
  9. 1/2 tsp jeera
  10. 1 tsp coriander powder
  11. 1/2 tsp red chilli powder
  12. 1/2 tsp garam masala
  13. 1/2 tsp dry mango powder
  14. as needed Chopped green coriander
  15. to taste Salt
  16. as needed Oil for frying


20 minutes
  1. Mix salt, ajwain and oil in maida and make a bread crumbs like add water in batches and knead a stiff dough

  2. Cover it and let it rest for 10-15 mins

  3. Heat oil in a pan and add jeera as it sputter add green chilli, coriander powder, red chilli powder and mashed potato

  4. Mix it well and add salt, garam masala and dry mango powder

  5. Mix it nicely and at last add chopped coriander and let it cool

  6. Take a lemon size ball from dough and roll it in a thin roti cut it into half

  7. Apply water on edges and fold it like cone

  8. Stuff potato in it and seal it by pressing it

  9. Make all the samosa like this

  10. Heat oil in a wok and deep fry samosa at medium flame

  11. Enjoy it with green chutney or sauce
