Samvat Rice Khichdi(Samak Rice Upma)
Ingredients

1/2 cup Soaked Samak rice

3-4 tbsp Ghee

2-3 tbsp Roasted and crushed peanuts

8-10 Curry leaves

2 chopped Green chillies
-
8-10 Cashewnuts
-
20-25 Raisins

2 chopped Potatoes
-
1/2 tsp Black pepper powder

1 tsp Sendha salt
-
2 cups Water
-
1/2 cup Curd
-
2 tbsp Chopped coriander leaves
-
2 tbsp Pomegranate seeds
Cooking Instructions

In a thick bottomed pan heat ghee add peanuts curry leaves green chillies cashew nuts and raisins stir and saute until cashew becomes light brown in colour.

Then add potatoes and saute well.

Add samak rice and saute for a minute.

Add water and stir again.

Add black pepper and sendha salt and mix well.

Close with lid and let it cook for 3-4minutes.

Add beaten curd and mix well.

Again close the lid and cook for 5-7miniutes.

When water evaporates then switch off the flame.

Serve hot Samak Rice Khichdi with green coriander leaves, pomegranate seeds cashewnuts and raisins with masala curd.
