Rinse 1 cup (150g) of azuki beans.
Put 3 cups (600ml) water in a medium pan,
then bring to a boil.
When the water is boiling, put the beans in.
Cover the pan, reduce the heat to medium.
and simmer for about 40 minutes.
Add 1 cup of cold water.
Stir gently once.
9.Then, simmer for another 5 to 10 minutes.
Continue to cook the beans until as tender as you like them.
Drain them into a sieve.
