Don't knead the crust
材料
(21cmの丸型)

Crust
Bread flour (strong)
80
Pastry flour
120g
Butter
160g
Cold water
100cc
Egg york

Apple compote
Chopped apples
600g (About 3-4)
Sugar
150g
Lemon juice
1 tbsp
Cinnamon

Pastry flour
1/2 tbsp
Cold water

Mom taught me this recipe
1.
Cut butter to 7mm cubes
2.
Sieve 2 kinds of flours and add butter.
3.
Mix them with your fingers adding water little by little
4.
Put them together. Pieces of butter can be remained!
5.
Wrap it and let it rest in the fridge for 1 hour

Put apple, lemon juice and sugar in a plate, and 12min in mw
7.
Remove juice and add cinnamon and flour melted water in it
8.
Another 3min in microwave
9.
Flour the table and roll out the crust to 1cm thickness
10.
Fold the crust in three and do step 6 more than 5 times
11.
Cut it in 2. One for the foundation, the other for the lid
12.
Spread Spread oil or butter on a plate and put crust on it
13.
Make holes on the foundation with folk
14.
Put compote on it and decorate with the rest of crust on top
15.
Spread york on the crust
16.
Bake 35min /200C (no need to preheat)

Spread jam on te pie
