Grilled greek beef w' cold rice salad & bacon crumble

Ingredients

2 servings
  1. 500 g beef strip
  2. handful coriander
  3. 1/4 tomato, speeds removed
  4. 10 cm cucumber, seeds removed
  5. salt
  6. salad
  7. 1 1/2 cup cooked rice, cold
  8. 1/2 tomato, diced
  9. 10 cm cucumber, diced
  10. 2 tbsp diced red onion
  11. salt
  12. olive oil
  13. lemon juice
  14. 1 bacon rash

Cooking Instructions

    In a food processor, blend the tomatoes and cucumber until crumble consistency. Roll beef strap in crumble. On a hot griddle pan, cook beef for 5-7 minutes then turn and cook again for 5 minutes, depending on size.

    Remove from heat and allow to rest.

    In same pan, cook the bacon until brown n crispy. Remove. Place in food processor, blitz until crumbley.

    In a bowl toss the salad ingredients together and dress with drizzle of olive oil and lemon juice. Season.

    Once rested, slice beef. Serve immediately.
