It's been really hot here in Queensland. I bought some bananas over the weekend, and they all ripen real quick. I like the idea of baking some banana bread, but I am time poor, and it's just too hot to use the oven right now. So, here is my lazy version of my banana cake, using microwave and only take you 8 mins!

Ingredients

6 servings
  1. Wet Ingredients
  2. 2 eggs (beatten)
  3. 2 tbsp milk
  4. 1 tsp vanilla essence
  5. 100 g butter
  6. Dry Ingredients
  7. 100 g self-rising flour
  8. 70 g brown sugar
  9. 2 tsp cinnamon powder
  10. Topping of your choice
  11. I am using dark chocolate chips and pure peanut butter

Cooking Instructions

    Mashed the ripe banana until smooth. Add in whisked egg, milk and vanilla essence to the mixing bowl and mix well, then set aside.

    In a separate bowl, mix all the dry ingredients (sugar, flour and cinnamon powder) and set aside.

    Put butter in a microwave safe dish and microwave for 30 seconds or until butter is melted.

    Once butter is melted, add in both wet and dry ingredients and mix well.

  5. 5

    Sprinkle your topping on top and microwave for 8 minutes. Your cake is now ready.
