Vegan peanut stew

Recipe passed to me from a friend. Think she got it from Holy Vegan Cow website. Again, it's very straight forward and makes loads so you have spare to freeze and use throughout the month. Make sure you use the biggest saucepan you have!

Ingredients

  1. 1 onion
  2. 20 pods okra, slice lengthways
  3. 5 mini aubergines, cubed
  4. 2 tblsp grated ginger
  5. 2 green chilli
  6. 1 large sweet potato, cubed
  7. 2 tomatoes, pureed
  8. 2 tblsp tomato puree
  9. .75 cup smooth peanut butter
  10. .5 cup peanuts
  11. 5 cups veg stock
  12. 1 tsp paprika
  13. 1 tsp fenugreek
  14. 1 tblsp coriander
  15. 1 tsp cumin
  16. to taste Harrissa paste

Method

  1. Blank step
    Add Photo

    Sauté onion in a very large pan in a splash of oil over medium heat

    Add spices, chilli and tomato puree and stir until purée is nearly dry

    Add tomatoes, peanut butter and stock and stir

    Add veg and peanuts and bring to the boil. Turn heat down and simmer for 30-mins

    Stir in harissa paste a little at a time until you have the heat/spice you like

    Serve with cous cous, quinoa or rice
