Prick the Aubergine all over using a fork. Apply some oil to it and place it directly on a gas stove until the skin blackens and inner flesh becomes soft. (You can also roast it in the oven with a pre-heated grill at 190 degrees F for about 40- 45 mins or till soft)

Try inserting a fork to test. It should penetrate and come out easily without any resistance.

Peel it and chop the flesh or press it with fork to mash it. Don’t make it smooth, it should retain aubergine texture.

Add chopped garlic, tahini, lemon juice, salt, olive oil and mix well.

Swirl little olive oil on top, sprinkle parsley and chili flakes.
